Bina’s Authentic Indian Chai
Chai tea is certainly a guilty pleasure around here, one that we enjoy hot, iced, even frozen and blended. I love mine in the afternoon for a little pick-me-up. This recipe comes from vendor Bina Mehta Spice Blends, and uses her delicious Aromatic Chai blend. Here’s what you need to make this sweet and savory drink:

Ingredients:
- 4 cups water
- 1 tablespoon grated ginger
- 1 cup whole milk*
- 4 teaspoons black tea
- 1 tablespoon Bina’s Aromatic Chai spice blend
- 2 tablespoons sugar (optional)
Directions:
In a 4-quart stainless steel saucepan on high heat, bring the water and ginger to a boil. Add the milk, black tea, Bina’s Aromatic Chai, and sugar (if desired), bring to a boil again. Take it off the stove immediately, strain the mixture and serve in cups.
*If you choose to substitute almond, cashew, or soy milk, you will need to use 4 cups and reduce the water to 1 cup. Do not use coconut milk because it will separate while heating.
